What does Hi-Low mean at a casino table?

The term Hi-Low in brick and mortar casinos and the table versions of the game have a different meaning than with Video Poker machines. It refers to the players’ right to claim the Pot. Most gambling sites offer the following Hi-Low Poker variations:

Jacks are the finalist in this version, so there needs to have a pair of Jacks to win.
